The Aglianico collection takes place between the end of October and the beginning of November to obtain the best quality of the fruit. Gentle crushing and fermentation on the skins for 15/20 days at controlled temperature with regular pumping over. At the end of the fermentation we remove the skins and we leave it to mature in steel barrels for about a year. It needs also a further maturation in the bottle for six months.
Food suggestion:
Given the body and the charge of tannins absolutely typical of this grape, you should serve it with
dishes with a strong taste such as grilled meat, pecorino cheese, provolone del Monaco
DOP and the typical Neapolitan ragù.
